Mexican cornsoup


4 servings

3 tbsp oil
1 450 g corn
1 dl light cream
1 red pepper
1 yellow onion ( 1 kr)
1 garlic clove ( 1 kr)
1 buljon cube
1 black beans 280-300 g 
6 dl water
1 msk cummin
1 tsk paprikapowder


Fry the spices, chopped onions, garlic and red pepper. Add the corns, the buljon and the water and let it boil for 10 minutes. Mix it with a hand held mixer until smooth. Add the cream and the beans and heat it up again. Serve with a pice of dark rye bread.

Turkey Meatloaf

Serves 8

205 calories per serving

1 cup diced onion

1/2 cup diced celery 

1 can organic cranberry sauce

1 cup rolled oats

2 pounds ground turkey

1 teaspoon sage or thyme leaves, crumbled

1 teaspoon salt

ground black pepper

Mix all ingredients well. Press into a loaf pan and smooth top. 

Bake at 350F for an hour. Check for doneness by cutting into the meatloaf and looking at the color. If the meat is still pink, put back in for another 10 minutes and check again.
